Eggplant Balls & Saalata


  • Eggplant 
  • 1  White onion
  • 1  Capsicum
  • 2 Garlic Cloves
  • 1tsp Cumin
  • Salt & Pepper to taste   
  • 1 Egg
  • Breadcrumbs
  • Handful of parsley

  • 1/2 red onion
  • 2 cucumbers
  • 2 tomatoes
  • Handful of Coriander
  • Olive oil
  • Salt and pepper
  • Lemon juice


  1. Peel, salt, and then roast eggplant in 190C oven for 20-25 mins tossing halfway through. Remove from oven and pulse in food processor.

  2. Sauté onion, capsicum and garlic with cumin, salt and pepper until tender and add to eggplant. Add one egg, some breadcrumbs, parsley, salt and pepper. Form into desired shape and pan fry until golden.
  3. Serve with Rice, Salaata and Greek Yoghurt.
