Greek Pasta Salad

Greek Pasta Salad

Salad Ingredients:

  • 1/2 red onion
  • 1 capsicum
  • 1/2 cucumber
  • 1 cup cherry tomatoes
  • 1/4 cup black olives
  • Feta cheese - as little or as much as you prefer
  • handful of parsley 
  • 8oz pasta (we use Fusilli)
  • Chickpeas (optional)

Sauce Ingredients:

  • 1/3 cup olive oil
  • 1/3 cup water
  • 3tbsp red wine vinegar
  • juice of 1/2 a lemon
  • 2tbsp dijon mustard
  • 2 tbsp honey
  • salt and pepper


  1. Cook your pasta, while this is cooking - cut all of the above.
  2. Once your pasta is cooked, drain and run through with cold water.
  3. Add all of your vegetables + olives and feta to the pasta.
  4. Add all of your dressing ingredients to a bowl, mix then pour over pasta.
  5. Mix all together, serve and enjoy!
