Leek Fritters
Ingredients:
- 3 Leeks
- 1 Brown Onion
- 1 Red chilli (optional)
- Handful chopped parsley leaves
- ¾ tsp ground coriander
- ¼ tsp cinnamon
- ¼ ground turmeric
- 1 tsp ground cumin
- 1 tsp sugar (I used coconut sugar)
- ½ tsp salt
- ¾ cup self raising flour ( I used GF)
- 1 Tbsp baking powder
- 1 egg
- 2/3 cup milk of choice (I used almond)
- 4 tsp unsalted butter melted
Method:
Step One:
Slice Leeks in half length ways and in about 1cm thick slices, dice brown onion and add both to pan with olive oil until soft. Transfer to a bowl and add the chilli, parsley, all the spices sugar and salt and set aside to cool.
Step Two:
In a separate bowl sift in flour, baking powder, add the whole egg and milk and butter and mix together to form batter. Gently mix into the vegetable mix.
Step Three:
Add oil to fry pan and place over medium heat. Spoon the mixture into the pan in to make desired size of fritters. Fry them until golden and crisp then flip to other side. Continuedoing this and add in oil as needed. You can add into air fryer if desired.
